How to Prepare

  1. In a large mixing bowl, combine 10 cups of whole wheat flour
  2. 5 teaspoons of ajwain seeds
  3. 5 teaspoons of salt, and 10 tablespoons of ghee.
  4. Gradually add 4-5 cups of water to the mixture and knead into a soft, pliable dough. Cover and let it rest for 10 minutes.
  5. Divide the dough into 40 equal portions and shape them into balls.
  6. Dust a rolling surface with flour and roll each ball into a flat, round roti about 6 inches in diameter.
  7. Heat a tawa over medium heat. Place a roti on the tawa and cook for 1-2 minutes until small bubbles appear.
  8. Flip the roti and cook the other side for another 1-2 minutes, applying a little ghee on both sides if desired.
  9. Remove from the tawa and keep warm in a covered container. Repeat for the remaining rotis.
  10. Serve hot with dal, curry, or yogurt.
