How to Prepare
In a large mixing bowl, combine 10 cups of rice flour
2 cups of finely chopped onions
1 cup of grated carrots
1/2 cup of chopped coriander leaves
10 finely chopped green chilies
2 tablespoons of cumin seeds, and salt to taste.
Gradually add 5-6 cups of water to the mixture, kneading it into a soft, pliable dough. The dough should not be too sticky or too dry.
Divide the dough into 40 equal portions (for 20 people, assuming 2 rotis per person).
Take a banana leaf or parchment paper, grease it lightly with oil, and place one portion of the dough on it.
Pat the dough into a thin, round roti using your fingers or a rolling pin. Make a few holes in the center to ensure even cooking.
Heat a tawa over medium heat and grease it lightly with oil.
Carefully transfer the roti onto the tawa, removing the banana leaf or parchment paper.
Cook for 2-3 minutes on one side until golden brown, then flip and cook the other side for another 2 minutes, drizzling a little oil around the edges if needed.
Repeat the process for the remaining dough portions.
