How to Prepare

  1. Boil the potatoes until they are just tender, about 15 minutes. Let them cool, then peel and cut into bite-sized cubes.
  2. In a mixing bowl, combine cornflour, rice flour, red chili powder, garam masala, ginger-garlic paste, salt, and a little water to make a thick batter.
  3. Add the potato cubes to the batter and mix well to coat evenly.
  4. Heat oil in a deep frying pan over medium heat. Fry the coated potato cubes in batches until golden and crispy, about 5-7 minutes per batch.
  5. Remove with a slotted spoon and drain excess oil on paper towels.
  6. In a separate pan, heat 2 tbsp oil, add curry leaves, green chilies, and yogurt. Stir for 1-2 minutes.
  7. Add the fried potatoes to this mixture and toss well to coat with the yogurt sauce.
  8. Garnish with chopped coriander leaves and serve hot as a starter.
