How to Prepare

  1. Prepare the batter by mixing the fermented rice and coconut mixture with sugar and a pinch of salt.
  2. Heat the Appam pan on medium flame and lightly grease it with oil.
  3. Pour a ladleful of batter into the center of the pan and swirl the pan to spread the batter thinly along the edges, leaving the center thick.
  4. Cover the pan with a lid and cook for 2-3 minutes until the edges are crispy and golden, and the center is soft and cooked.
  5. Remove the Appam using a spatula and repeat the process for the remaining batter.
  6. Serve hot with coconut milk or stew.
