How to Prepare

  1. Rinse 5 cups of aval (flattened rice) under running water and set aside to drain.
  2. In a heavy-bottomed pan, heat 10 liters of milk on medium flame and bring it to a boil, stirring occasionally to prevent burning.
  3. Once the milk boils, reduce the heat to low and add the rinsed aval. Stir well to combine.
  4. Cook the mixture for 10-12 minutes, stirring frequently, until the aval softens and the mixture thickens.
  5. Add 5 cups of sugar and 2 teaspoons of cardamom powder. Stir until the sugar dissolves completely.
  6. In a small frying pan, heat 1 cup of ghee. Add 1 cup of cashew nuts and 1 cup of raisins. Fry until golden brown.
  7. Add the fried cashews and raisins along with the ghee to the payasam. Mix well.
  8. Turn off the heat and let the payasam rest for 5 minutes before serving warm.
