How to Prepare
Wash and chop all vegetables (carrots, beans, drumsticks, yam, raw banana, and ash gourd) into 2-inch long pieces.
In a large pot, add the chopped vegetables, turmeric powder, and enough water to cover them. Cook on medium heat until the vegetables are tender (about 15-20 minutes).
Grind the grated coconut, green chilies, cumin seeds, and soaked tamarind into a coarse paste using a mixer grinder.
Add the ground paste to the cooked vegetables and mix well. Add salt to taste and let it simmer for 5-7 minutes.
In a small pan, heat coconut oil and add mustard seeds. Once they splutter, add curry leaves and pour this tempering over the kootu.
Mix well and turn off the heat. Add fresh yogurt, stir gently, and let it rest for 5 minutes before serving.
