How to Prepare
Cut baby corn into bite-sized pieces if not already small.
In a mixing bowl, combine cornflour, all-purpose flour, ginger-garlic paste, red chili powder, garam masala, salt, and a little water to make a thick batter.
Add baby corn pieces to the batter and coat them evenly.
Heat oil in a deep frying pan over medium heat.
Fry the coated baby corn pieces in batches until golden and crispy. Remove with a slotted spoon and drain on paper towels.
In a separate pan, heat 1 tbsp oil, add chopped garlic, green chilies, and curry leaves. Sauté for a minute.
Add soy sauce, tomato ketchup, red chili sauce, and a pinch of salt. Mix well.
Toss the fried baby corn in the sauce mixture until well coated.
