How to Prepare

  1. Cut baby corn into bite-sized pieces if not already small.
  2. Prepare a batter by mixing 1.5 cups of cornflour
  3. 1 cup of all-purpose flour
  4. 2 tsp salt
  5. 1 tsp black pepper, and water to form a thick consistency.
  6. Heat oil in a wok or deep frying pan over medium-high heat for frying.
  7. Dip baby corn pieces into the batter and deep fry until golden brown. Remove with a slotted spoon and set aside on paper towels to drain excess oil.
  8. In a separate pan, heat 4 tbsp oil over medium heat. Add 10 cloves minced garlic
  9. 5 green chilies (finely chopped), and 5 medium onions (finely chopped). Sauté until onions are translucent.

  11. Mix in 10 tbsp soy sauce
  12. 5 tbsp tomato ketchup
  13. 5 tsp vinegar
  14. 2 tsp sugar, and 2 tsp black pepper. Stir well to combine.
  15. Add the fried baby corn to the sauce mixture and toss to coat evenly.
  16. Garnish with chopped spring onions and serve hot as a starter.
