How to Prepare
Cut baby corn into bite-sized pieces if not already small.
In a mixing bowl, prepare the marinade by combining cornflour, rice flour, ginger-garlic paste, red chili powder, garam masala, salt, and a little water to make a thick batter.
Add baby corn pieces to the batter and coat them evenly. Let it marinate for 15 minutes.
Heat oil in a deep frying pan over medium heat.
Fry the marinated baby corn pieces in batches until golden brown and crispy. Use a slotted spoon to remove them and place on paper towels to drain excess oil.
In a separate pan, heat 1 tbsp oil, add chopped garlic, green chilies, curry leaves, and sauté for a minute.
Add soy sauce, tomato ketchup, red chili sauce, and a pinch of salt. Mix well.
Toss the fried baby corn in the sauce mixture until well coated.
