How to Prepare

  1. Rinse the soaked barnyard millet and urad dal separately.
  2. Grind the urad dal into a smooth batter, adding water as needed (about 10-15 minutes).
  3. Grind the barnyard millet into a slightly coarse batter, adding water as needed (about 8-10 minutes).
  4. Mix both batters together in a large bowl, add salt, and stir well to combine.
  5. Cover the bowl and let the batter ferment in a warm place for 8-10 hours or overnight.
  6. After fermentation, stir the batter gently. If it’s too thick, add a little water to adjust consistency.
  7. Grease the idli molds with oil or ghee.
  8. Pour the batter into the molds, filling them about 3/4th full.
  9. Steam the idlis in an idli steamer for 10-12 minutes on medium heat.
  10. Check if the idlis are cooked by inserting a toothpick; it should come out clean.
  11. Allow the idlis to cool for 2-3 minutes, then remove them from the molds using a spoon.
  12. Serve hot with chutney and sambar.
