How to Prepare

  1. In a large mixing bowl, combine 5 cups of whole wheat flour
  2. 5 cups of besan (gram flour)
  3. 2 tsp salt
  4. 2 tsp carom seeds
  5. 2 tsp red chili powder
  6. 1 tsp turmeric powder, and 4 tbsp ghee. Mix well.
  7. Gradually add 2.5-3 cups of water to the mixture and knead into a soft, pliable dough. Cover and let it rest for 15 minutes.
  8. Divide the dough into 20 equal portions and roll each portion into a ball.
  9. Dust a rolling surface with flour and roll each ball into a thin circle, about 6-7 inches in diameter.
  10. Heat a flat griddle (tawa) over medium heat. Place the rolled paratha on the griddle.
  11. Cook for 1-2 minutes until small bubbles appear, then flip the paratha.
  12. Spread 1 tsp of ghee on the cooked side and flip again after 1 minute. Spread ghee on the other side as well.
  13. Cook until both sides are golden brown with crisp edges. Repeat for all parathas.
  14. Serve hot with yogurt, pickle, or curry.
