How to Prepare

  1. In a large mixing bowl, combine 10 cups of jowar flour with 2 teaspoons of salt.
  2. Gradually add 5-6 cups of warm water to the flour, mixing with your hands to form a soft, pliable dough. Adjust water as needed.
  3. Divide the dough into 20 equal portions and shape them into balls.
  4. Take one dough ball, flatten it slightly, and dust it with dry jowar flour to prevent sticking.
  5. Roll out the dough ball into a thin, round roti, about 6-8 inches in diameter.
  6. Heat a flat griddle (tawa) over medium heat. Place the rolled roti on the hot tawa.
  7. Cook for 1-2 minutes until small bubbles appear on the surface, then flip the roti.
  8. Cook the other side for another 1-2 minutes, pressing lightly with a spatula to ensure even cooking.
  9. Optionally, roast the roti directly on an open flame for a few seconds on each side for a smoky flavor.
  10. Brush with 1 teaspoon of ghee or oil if desired, and serve hot. Repeat for the remaining dough balls.
