How to Prepare

  1. In a large mixing bowl, combine 5 cups of whole wheat flour with 2 tsp of salt and 2 tbsp of oil. Mix well.
  2. Gradually add 2.5 cups of water to the flour mixture and knead into a soft, pliable dough. Cover and let it rest for 20 minutes.
  3. In another bowl, mix 5 cups of grated cabbage with 2 tsp of salt. Let it sit for 10 minutes, then squeeze out excess water.
  4. Add 2 tsp of cumin seeds
  5. 2 tsp of garam masala
  6. 2 tsp of red chili powder
  7. 2 tsp of coriander powder, and 4 tbsp of chopped coriander leaves to the cabbage. Mix well to prepare the stuffing.
  8. Divide the dough into 20 equal portions. Roll each portion into a small ball.
  9. Take one dough ball, flatten it slightly, and place 2-3 tbsp of cabbage stuffing in the center. Fold the edges over the stuffing and seal it.
  10. Dust the stuffed ball with flour and roll it out gently into a 6-7 inch circle.
  11. Heat a tawa over medium heat. Place the rolled paratha on the tawa and cook for 1-2 minutes until small bubbles appear.
  12. Flip the paratha, apply 1 tsp of ghee or oil on the cooked side, and cook the other side for another 1-2 minutes until golden brown spots appear.
  13. Flip again, apply ghee or oil on the other side, and cook for 30 seconds. Repeat for all parathas.
  14. Serve hot with yogurt, pickle, or chutney.
