How to Prepare

  1. Rinse and soak chana dal for 6 hours. Drain the water.
  2. Pressure cook the soaked chana dal with 2 cups of water and a pinch of salt for 3 whistles or until soft. Let it cool.
  3. Drain any excess water from the cooked dal and mash it coarsely.
  4. In a pan, heat 2 tbsp oil, add cumin seeds, and let them splutter. Add chopped green chilies, ginger, and sauté for a minute.
  5. Add mashed chana dal, garam masala, amchur powder, red chili powder, and salt. Mix well and cook for 5-7 minutes until the mixture is dry. Let it cool.
  6. In a large mixing bowl, combine whole wheat flour, a pinch of salt, and 2 tbsp oil. Gradually add water and knead into a soft dough. Cover and rest for 20 minutes.
  7. Divide the dough into 20 equal portions. Take one portion, flatten it, and place 1-2 tbsp of the chana dal stuffing in the center.
  8. Bring the edges together to seal the stuffing inside and roll it out gently into a flat circle (paratha) using a rolling pin and some dry flour for dusting.
  9. Heat a tawa over medium heat, place the rolled paratha on it, and cook for 1-2 minutes. Flip and apply 1 tsp ghee or oil on the cooked side.
  10. Flip again, apply ghee on the other side, and cook until golden brown spots appear on both sides.
  11. Repeat the process for the remaining dough and stuffing. Serve hot with yogurt, pickle, or curry.
