How to Prepare
In a large mixing bowl, combine 5 cups of whole wheat flour with a pinch of salt and 2 tablespoons of oil. Gradually add water (about 2 cups) to form a soft dough. Knead for 5-7 minutes until smooth. Cover and let it rest for 15 minutes.
In another bowl, mix 4 cups of grated cheese with 2 finely chopped green chilies
1 teaspoon of cumin powder
1 teaspoon of garam masala, and a handful of chopped coriander leaves.
Divide the dough into 20 equal portions. Roll each portion into a small ball.
Take one dough ball, flatten it slightly, and place 2-3 tablespoons of the cheese mixture in the center. Fold the edges over the filling to seal it completely.
Dust the stuffed ball with flour and roll it out gently into a 6-7 inch circle, ensuring the filling doesn't spill out.
Heat a tawa over medium heat. Place the rolled paratha on the tawa and cook for 1-2 minutes until small bubbles appear.
Flip the paratha, spread 1 teaspoon of ghee or oil on the cooked side, and cook the other side for another 1-2 minutes until golden brown spots appear.
Flip again, apply ghee on the other side, and cook for 30 seconds. Repeat for all parathas.
