How to Prepare

  1. Grind the soaked urad dal with minimal water to form a thick, smooth batter.
  2. Add salt, chopped green chilies, ginger, curry leaves, and cumin seeds to the batter. Mix well.
  3. Heat oil in a deep frying pan over medium heat.
  4. Wet your hands, take a small portion of batter, shape it into a ball, and make a hole in the center to form a vada.
  5. Carefully slide the vada into the hot oil and fry until golden brown and crispy on both sides.
  6. Remove the vada using a slotted spoon and drain excess oil on a paper towel.
  7. Soak the fried vadas in lukewarm water for 5 minutes, then gently squeeze out the water.
  8. Prepare curd mixture by whisking curd with salt, sugar, and a little water to achieve a smooth consistency.
  9. Place the vadas in a serving dish and pour the curd mixture over them.
  10. Garnish with boondi, chopped coriander leaves, red chili powder, and cumin powder. Serve chilled.
