How to Prepare

  1. Grind the soaked urad dal with minimal water to form a thick, smooth batter.
  2. Add salt, cumin seeds, and chopped green chilies to the batter and mix well.
  3. Heat oil in a deep frying pan over medium heat.
  4. Wet your hands, take a small portion of batter, shape it into a small ball, and flatten it slightly to form a vada.
  5. Carefully slide the vada into the hot oil and fry until golden brown on both sides. Fry in batches to avoid overcrowding.
  6. Remove the vadas with a slotted spoon and immediately soak them in lukewarm water for 10-15 minutes.
  7. Gently squeeze out excess water from the vadas and set them aside.
  8. Whisk the curd with sugar, salt, and a little water to make it smooth and pourable.
  9. Arrange the vadas in a serving dish, pour the whisked curd over them, and sprinkle with roasted cumin powder, red chili powder, and chaat masala.
  10. Garnish with chopped coriander leaves and drizzle with tamarind chutney and green chutney if desired.
  11. Refrigerate for 1-2 hours before serving for best taste.
