How to Prepare
Wash and soak toor dal for 30 minutes. Pressure cook with 6 cups of water and a pinch of turmeric for 3 whistles until soft. Mash and set aside.
In a large pot, add tamarind extract
10 cups of water, drumsticks, onions, tomatoes, and turmeric powder. Cook on medium heat for 15 minutes until vegetables are tender.
Add sambar powder, salt, and the mashed toor dal to the pot. Mix well and bring to a boil. Simmer for 10 minutes.
In a small pan, heat oil for tempering. Add mustard seeds, cumin seeds, asafoetida, curry leaves, and dried red chilies. Once they splutter, pour the tempering into the sambar.
Garnish with chopped coriander leaves and serve hot with rice or idli.
