How to Prepare

  1. In a large mixing bowl, combine 3 cups of rava (semolina)
  2. 5 cups of rice flour, and 0.75 cups of maida (all-purpose flour).
  3. Add 3 tsp salt
  4. 3 tsp cumin seeds, and 3 green chilies (finely chopped) to the dry mixture.
  5. Gradually add 9 cups of water while whisking to form a thin, lump-free batter. Let it rest for 20 minutes.
  6. Heat a non-stick dosa tawa over medium heat and lightly grease it with ghee.
  7. Stir the batter well, then pour a ladleful onto the tawa in a circular motion, starting from the edges and moving inward to form a thin layer.
  8. Drizzle 1-2 tsp of ghee over the dosa and cook for 2-3 minutes until the edges turn golden and crisp.
  9. Fold the dosa in half or roll it and remove from the tawa. Repeat for the remaining batter.
  10. Serve hot with coconut chutney and sambar.
