How to Prepare
Cut the cauliflower into medium-sized florets and clean them thoroughly.
In a mixing bowl, prepare the marinade by combining rice flour, corn flour, red chili powder, turmeric powder, garam masala, ginger-garlic paste, salt, and a little water to make a thick batter.
Add the cauliflower florets to the batter and mix well to coat evenly. Let it marinate for 15-20 minutes.
Heat oil in a deep frying pan over medium heat.
Once the oil is hot, carefully add the marinated cauliflower florets in small batches and fry until golden brown and crispy.
Remove the fried florets using a slotted spoon and place them on a paper towel to drain excess oil.
In a separate pan, heat 2 tablespoons of oil and add curry leaves, green chilies, and chopped onions. Sauté until onions turn golden brown.
Add the fried cauliflower florets to the pan and toss well to coat with the tempered spices.
Garnish with chopped coriander leaves and serve hot as a snack or appetizer.
