How to Prepare
Rinse the sprouted green gram thoroughly in water to remove any dirt.
In a pressure cooker or pot, cook the sprouted green gram with 5 cups of water and a pinch of salt for 1 whistle or until just tender (do not overcook). Drain excess water and set aside.
Heat 5 tablespoons of oil in a frying pan or kadai over medium heat.
Add 5 teaspoons of mustard seeds and let them splutter.
Add 5 teaspoons of urad dal and fry until golden brown.
Add 10-15 dried red chilies (adjust to taste) and 5 teaspoons of asafoetida. Sauté for a few seconds.
Add the cooked green gram sprouts to the pan and mix well to coat with the tempering.
Add salt to taste and stir for 2-3 minutes on low heat.
Add 2.5 cups of grated fresh coconut and mix thoroughly for another 2 minutes.
Turn off the heat, garnish with chopped coriander leaves, and serve warm.
