How to Prepare
Heat 2 tablespoons of oil in a frying pan over medium heat.
Add 2 teaspoons of mustard seeds and let them splutter.
Add 4 teaspoons of urad dal and 4 teaspoons of chana dal, and fry until golden brown.
Add 10 dried red chilies and fry for a minute until they release aroma.
Add 2 cups of horse gram and sauté for 5-7 minutes until slightly roasted.
Turn off the heat and let the mixture cool completely.
Transfer the cooled mixture to a blender. Add 2 teaspoons of tamarind paste, salt to taste, and a little water.
Grind into a coarse or smooth paste as per preference, adding water as needed.
For tempering, heat 2 tablespoons of oil in a small pan, add 1 teaspoon of mustard seeds, a pinch of asafoetida, and a few curry leaves. Fry for a few seconds.
Pour the tempering over the chutney and mix well.
Serve the horse gram chutney with dosa, idli, or rice.
