How to Prepare

  1. Boil 5 cups of water with 2 tsp salt and 2 tbsp oil in a large pot.
  2. Once the water starts boiling, reduce the heat and gradually add 5 cups of rice flour while stirring continuously to avoid lumps.
  3. Mix until the dough comes together and forms a smooth, non-sticky consistency. Turn off the heat and let it cool slightly (about 5 minutes).
  4. Knead the dough while it is still warm to make it smooth and pliable.
  5. Grease the idiappam press with a little oil. Fill the press with a portion of the dough.
  6. Press the dough onto greased steamer plates or idli molds in a circular motion to form thin noodles.
  7. Steam the idiappam for 10-12 minutes on medium heat until cooked and soft.
  8. Remove from the steamer and let it cool slightly before transferring to a serving plate.
  9. Repeat the process with the remaining dough.
  10. Serve hot with coconut milk, vegetable stew, or chutney.
