How to Prepare

  1. In a large mixing bowl, combine gram flour, rice flour, red chili powder, asafoetida, salt, and carom seeds.
  2. Add softened butter to the dry mixture and mix well until it resembles breadcrumbs.
  3. Gradually add water, little by little, to form a soft, non-sticky dough.
  4. Heat oil in a deep frying pan over medium heat. Test the oil by dropping a small piece of dough; it should sizzle and rise to the surface.
  5. Grease the sev press with oil and fill it with the prepared dough. Use the plate with small holes for kara sev.
  6. Press the dough directly into the hot oil in a circular motion to form sev. Fry in batches without overcrowding.
  7. Fry until golden brown and crisp, about 2-3 minutes per batch. Use a slotted spoon to remove and drain on paper towels.
  8. In a separate pan, fry peanuts, roasted gram dal, and curry leaves until crisp. Add these to the cooled sev.
  9. Mix everything well and let it cool completely before storing in an airtight container.
