How to Prepare
Rinse the kodo millet thoroughly under running water 2-3 times to remove any impurities or dust.
In a pressure cooker or large pot, add the rinsed kodo millet and water in a 1:2.5 ratio (10 cups millet to 25 cups water).
Add a pinch of salt to enhance the flavor (optional).
If using a pressure cooker, close the lid and cook for 2 whistles on medium heat. If using a pot, cover and cook on low-medium heat for 20-25 minutes until the millet is soft and water is absorbed.
Once cooked, let it rest for 5 minutes, then fluff the millet with a fork or ladle.
Serve hot with sambar, rasam, or any curry of your choice.
