How to Prepare

  1. Peel and grate 10 medium-sized lauki (bottle gourds) using a grater.
  2. Squeeze out excess water from the grated lauki using a clean cloth or by pressing with hands.
  3. Heat 1 cup of ghee in a large pan or wok over medium heat.
  4. Add the grated lauki to the pan and sauté for 10-12 minutes until it softens and the raw smell disappears.
  5. Add 5 liters of full-fat milk to the pan and cook on medium heat, stirring occasionally, for about 30-40 minutes until the milk reduces and thickens.
  6. Add 2.5 kg of sugar and mix well. Cook for another 10 minutes until the sugar dissolves completely and the mixture thickens further.
  7. Add 2 tablespoons of cardamom powder and 200 grams of chopped nuts (almonds, cashews, pistachios). Mix well.
  8. Cook for an additional 5 minutes, stirring continuously, until the halwa reaches a desired consistency.
  9. Turn off the heat and let it cool slightly before serving. Garnish with additional nuts if desired.
