How to Prepare
In a large mixing bowl, combine rice flour, maida, semolina, finely chopped onions, green chilies, curry leaves, coriander leaves, cumin seeds, and salt.
Add hot oil to the mixture and mix well using a spoon or your fingers until it resembles breadcrumbs.
Gradually add water, little by little, and knead to form a soft, pliable dough. Do not make it too watery.
Cover the dough and let it rest for 10 minutes.
Divide the dough into small lemon-sized balls.
Flatten each ball on a flat surface or between your palms to form a disc of about 3-4 inches in diameter. Ensure the edges are slightly thinner than the center.
Heat oil in a frying pan or kadai over medium heat. Test the oil by dropping a small piece of dough; it should sizzle and rise to the surface.
Carefully slide the flattened discs into the hot oil, frying 2-3 at a time depending on the size of the pan. Do not overcrowd.
Fry on medium heat until both sides are golden brown and crispy, flipping occasionally. This should take about 3-4 minutes per side.
Remove using a slotted spoon and drain excess oil on paper towels.
