How to Prepare

  1. In a large mixing bowl, combine 10 cups of maize flour with a pinch of salt.
  2. Gradually add 5-6 cups of warm water to the flour, kneading to form a soft, pliable dough. The dough should not be too sticky or too dry.
  3. Cover the dough with a damp cloth and let it rest for 10 minutes.
  4. Divide the dough into 40 equal portions (for 20 people
  5. 2 rotis each).
  6. Take one portion, flatten it slightly, and place it between two sheets of plastic or parchment paper to prevent sticking.
  7. Gently roll out the dough into a 6-7 inch circle, about 1/4 inch thick. Alternatively, pat it into shape with your hands.
  8. Heat a tawa over medium heat. Place the rolled roti on the hot tawa.
  9. Cook for 1-2 minutes until small bubbles appear, then flip the roti.
  10. Spread 1/2 tsp of ghee or oil on the cooked side and flip again after 1 minute.
  11. Cook the other side for another 1-2 minutes, pressing lightly with a spatula until golden brown spots appear.
  12. Remove from the tawa and repeat for the remaining dough portions.
  13. Serve hot with sarson ka saag, butter, or jaggery.
