How to Prepare

  1. In a large mixing bowl, combine 10 cups of all-purpose flour
  2. 2 tbsp sugar
  3. 2 tsp salt
  4. 2 tsp baking powder, and 1 tsp baking soda.
  5. Add 1.5 cups of yogurt and 4 tbsp oil to the dry ingredients and mix well.
  6. Gradually add 3-4 cups of lukewarm water to form a soft dough. Knead for 8-10 minutes until smooth.
  7. Cover the dough with a damp cloth and let it rest for 1.5 hours in a warm place.
  8. After resting, divide the dough into 20 equal portions and roll each into a ball.
  9. For the masala filling, mix 2 cups of boiled and mashed potatoes
  10. 1 cup finely chopped onions
  11. 4 green chilies (finely chopped)
  12. 2 tbsp chopped coriander
  13. 2 tsp cumin seeds
  14. 2 tsp chaat masala
  15. 1 tsp red chili powder, and salt to taste.
  16. Flatten each dough ball, place 1-2 tbsp of the masala filling in the center, and seal the edges to form a stuffed ball.
  17. Roll out each stuffed ball into a 6-7 inch circle, ensuring the filling doesn't spill out.
  18. Heat a tawa over medium heat. Place the rolled kulcha on the tawa and cook for 1-2 minutes until bubbles appear.
  19. Flip the kulcha and cook the other side for another 1-2 minutes until golden brown spots appear.
  20. Brush with butter or ghee on both sides and serve hot with chole or curry.
