How to Prepare

  1. Wash the mint leaves thoroughly under running water to remove any dirt.
  2. Heat 1 tablespoon of oil in a frying pan over medium heat.
  3. Add urad dal, chana dal, dried red chilies, and asafoetida to the pan. Sauté until the dals turn golden brown.
  4. Add the washed mint leaves to the pan and sauté for 2-3 minutes until they wilt.
  5. Turn off the heat and let the mixture cool down to room temperature.
  6. Transfer the cooled mixture to a blender. Add grated coconut, tamarind paste, and salt. Blend into a coarse paste, adding a little water if needed.
  7. Heat the remaining 1 tablespoon of oil in the frying pan for tempering.
  8. Add mustard seeds to the hot oil and let them splutter. Then add curry leaves and sauté for a few seconds.
  9. Pour the tempering over the blended mint pachadi and mix well.
  10. Serve the Mint Pachadi as a side dish with rice, dosa, or idli.
