How to Prepare

  1. In a large mixing bowl, combine 4 cups of besan (gram flour) and 4 cups of whole wheat flour.
  2. Add 2 teaspoons of salt
  3. 2 teaspoons of ajwain (carom seeds)
  4. 2 teaspoons of red chili powder
  5. 1 teaspoon of turmeric powder, and 4 tablespoons of finely chopped coriander leaves.
  6. Mix in 4 finely chopped green chilies and 2 cups of finely chopped onions.
  7. Add 4 tablespoons of ghee or oil to the mixture and mix well to form a crumbly texture.
  8. Gradually add water (about 2-3 cups) and knead into a soft, pliable dough. Cover and let it rest for 15 minutes.
  9. Divide the dough into 40 equal portions (for 20 people, assuming 2 rotis per person).
  10. Roll each portion into a ball and flatten it slightly. Dust with dry flour and roll out into a 5-6 inch circle.
  11. Heat a tawa over medium heat. Place the rolled roti on the tawa and cook for 1-2 minutes until small bubbles appear.
  12. Flip the roti, apply 1/2 teaspoon of ghee or oil on the cooked side, and cook the other side for another 1-2 minutes until golden brown spots appear.
  13. Flip again, apply ghee on the other side, and cook for a few seconds. Remove from tawa and repeat for remaining rotis.
  14. Serve hot with curd, pickle, or any curry of choice.
