How to Prepare

  1. Cook the toor dal in a pressure cooker with 5 cups of water and a pinch of turmeric for 3 whistles or until soft. Mash it and set aside.
  2. Soak the tamarind in 2 cups of warm water for 10 minutes, extract the juice, and set aside.
  3. Heat 2 tablespoons of oil in a large pot, add mustard seeds, and let them splutter.
  4. Add cumin seeds, asafoetida, curry leaves, and dried red chilies. Sauté for a few seconds.
  5. Add chopped onions and sauté until golden brown.
  6. Add the mixed vegetables (carrots, beans, drumsticks, etc.) and sauté for 5 minutes.
  7. Add sambar powder, turmeric powder, and salt. Mix well.
  8. Pour in the tamarind extract and 6 cups of water. Bring to a boil and simmer until vegetables are tender (about 15 minutes).
  9. Add the mashed toor dal and mix well. Adjust consistency by adding more water if needed. Simmer for 5-10 minutes.
  10. Garnish with chopped coriander leaves and serve hot with rice, idli, or dosa.
