How to Prepare
Sift 2 cups of gram flour (besan) to remove lumps and set aside.
In a heavy-bottomed pan, heat 2 cups of ghee on low flame until it melts completely.
Add the sifted gram flour to the melted ghee and stir continuously on low heat to avoid lumps. Roast until a nutty aroma emerges (about 5-7 minutes).
In a separate pan, prepare sugar syrup by boiling 4 cups of sugar with 1.5 cups of water. Stir until it reaches a one-string consistency (test by pulling a drop between fingers).
Slowly pour the hot sugar syrup into the roasted gram flour mixture while stirring continuously to prevent lumps.
Keep stirring the mixture on medium heat. Add an additional 1 cup of hot ghee in small batches, stirring well after each addition.
Continue stirring until the mixture starts leaving the sides of the pan and forms a frothy, porous texture (about 10-15 minutes).
Quickly transfer the mixture to a greased tray or plate and spread evenly using a spatula.
Let it cool for 5-10 minutes, then cut into desired shapes (squares or diamonds) while still warm.
Allow it to cool completely before removing the pieces from the tray. Serve or store in an airtight container.
