How to Prepare
In a large mixing bowl, combine 10 cups of all-purpose flour
4 tsp of salt
4 tsp of sugar, and 4 tbsp of baking powder.
Add 2 cups of yogurt
2 cups of milk, and 4 tbsp of oil to the dry ingredients. Mix until a soft dough forms.
Knead the dough for about 8-10 minutes until smooth and elastic. Cover with a damp cloth and let it rest for 1.5 hours in a warm place.
After resting, divide the dough into 40 equal portions and roll each portion into a ball.
Roll out each ball into an oval or teardrop shape, about 1/4 inch thick.
Preheat the tandoor or oven to 500°F (260°C). If using a tawa, heat it on high.
If using a tandoor, slap the rolled naan onto the inner wall. If using an oven, place on a baking sheet. If using a tawa, cook each side for 1-2 minutes until bubbles form and it puffs up.
Cook for 2-3 minutes until golden brown spots appear. Brush with melted butter or ghee immediately after removing from heat.
