How to Prepare

  1. In a large mixing bowl, combine 4 cups of all-purpose flour
  2. 1 tsp salt
  3. 1 tsp carom seeds, and 4 tbsp ghee. Mix well until the mixture resembles breadcrumbs.
  4. Gradually add water (about 1.5 cups) to form a stiff dough. Knead for 5-7 minutes until smooth.
  5. Cover the dough with a damp cloth and let it rest for 15 minutes.
  6. Divide the dough into 4 equal parts. Roll out each part into a thin sheet (about 1/8 inch thick).
  7. Using a knife or pizza cutter, cut the rolled dough into small diamond or square shapes.
  8. Heat oil in a deep frying pan over medium heat. Test the oil by dropping a small piece of dough; it should sizzle and rise to the surface.
  9. Fry the cut dough pieces in batches, ensuring not to overcrowd the pan. Fry until golden brown and crisp, about 3-4 minutes per batch.
  10. Remove with a slotted spoon and drain excess oil on paper towels. Let them cool completely.
  11. In a separate bowl, mix the fried namak para with 2 cups of sev
  12. 1 cup of roasted peanuts
  13. 1 cup of fried gram dal
  14. 1 tsp chaat masala
  15. 1 tsp red chili powder, and salt to taste.
  16. Store the mixture in an airtight container once completely cooled.
