How to Prepare
In a large mixing bowl, combine 4 cups of gram flour
1 cup of rice flour
2 tsp ajwain
2 tsp salt, and 4 tbsp melted ghee. Mix well.
Gradually add water (approximately 1.5 to 2 cups) to form a soft, non-sticky dough.
Heat oil in a deep frying pan over medium heat for frying.
Fill the sev press with the dough and use the smallest hole disc to press the dough directly into the hot oil in circular motions to form thin strands.
Fry until golden and crisp, turning occasionally. Remove with a slotted spoon and drain excess oil on paper towels.
Repeat the process for the remaining dough.
Once cooled, break the omapodi into small pieces.
In a separate pan, fry 2 cups of peanuts
1 cup of roasted gram dal, and 20 curry leaves until crisp. Add these to the omapodi.
Add 2 tsp red chili powder and mix everything well.
Store in an airtight container once completely cooled.
