How to Prepare
In a large mixing bowl, combine 5 cups of whole wheat flour with 1 tsp of salt. Gradually add 2.5 cups of water to form a soft dough. Knead for 5-7 minutes until smooth. Cover and let it rest for 20 minutes.
In another bowl, mix 5 finely chopped large onions
2 tsp of cumin seeds
2 tsp of garam masala
2 tsp of red chili powder
1 cup of chopped coriander leaves, and salt to taste to prepare the stuffing.
Divide the dough into 20 equal portions. Take one portion, flatten it slightly, and place 1-2 tbsp of the onion stuffing in the center.
Fold the edges of the dough over the stuffing to seal it completely, ensuring no stuffing escapes. Flatten it gently with your hands.
Dust the stuffed dough ball with dry flour and roll it out gently into a 6-7 inch circle using a rolling pin.
Heat a tawa over medium heat. Place the rolled paratha on the tawa and cook for 1-2 minutes until small bubbles appear.
Flip the paratha, spread 1 tsp of ghee or oil on the cooked side, and cook the other side for 1-2 minutes until golden brown spots appear.
Flip again, apply ghee or oil on the other side, and cook for another 30 seconds. Repeat for all parathas.
