How to Prepare

  1. Cut 1 kg of paneer into bite-sized cubes or rectangles.
  2. In a mixing bowl, combine 2 cups of besan (gram flour)
  3. 2 tsp red chili powder
  4. 1 tsp turmeric powder
  5. 2 tsp garam masala
  6. 1 tsp ajwain, and salt to taste.
  7. Gradually add water (about 1.5 cups) to the dry mixture to form a thick, smooth batter that can coat the paneer cubes.
  8. Heat oil in a deep frying pan over medium heat until hot (test by dropping a small amount of batter; it should sizzle and rise).
  9. Dip each paneer cube into the batter, ensuring it is fully coated, and carefully place it into the hot oil.
  10. Fry the paneer cubes in batches, turning occasionally, until golden brown and crispy on all sides (about 3-4 minutes per batch).
  11. Remove the pakoras using a slotted spoon and place them on paper towels to drain excess oil.
  12. Serve hot with mint chutney or tamarind chutney.
