How to Prepare
Prepare the dough by mixing 5 cups of whole wheat flour with 2 tsp salt and water as needed. Knead into a soft dough, cover, and let it rest for 30 minutes.
For the stuffing, grate 1 kg paneer in a bowl. Add 2 finely chopped onions
4 green chilies (chopped)
2 tsp ginger (grated)
1 tsp cumin powder
1 tsp garam masala
1 tsp red chili powder, salt to taste, and 1/2 cup chopped coriander leaves. Mix well.
Divide the dough into 20 equal portions and roll each portion into a small circle.
Place 2-3 tbsp of paneer stuffing in the center of each circle, fold the edges to seal, and roll out gently into a paratha of about 6-7 inches in diameter.
Heat a tawa over medium heat, place the paratha on it, and cook for 1-2 minutes until small bubbles appear.
Flip the paratha, apply 1 tsp ghee or oil on the cooked side, and cook the other side for another 1-2 minutes until golden brown spots appear.
Flip again, apply ghee on the other side, and cook for 30 seconds. Repeat for all parathas.
