How to Prepare

  1. Heat 10 liters of milk in a heavy-bottomed pan over medium heat, stirring occasionally to prevent sticking.
  2. Once the milk starts to boil, reduce to 5 liters by simmering for about 30 minutes, stirring frequently.
  3. Add 2.5 kg of crumbled paneer to the reduced milk and stir well to combine.
  4. Add 2 kg of sugar and mix until fully dissolved, about 5-7 minutes.
  5. Add 2 teaspoons of cardamom powder and a pinch of saffron strands soaked in warm milk for flavor.
  6. Simmer the mixture for another 10 minutes, stirring occasionally.
  7. Turn off the heat and let the payasam cool slightly. Garnish with 200 grams of chopped nuts (almonds, cashews, pistachios).
  8. Serve warm or chilled in bowls.
