How to Prepare

  1. In a large mixing bowl, combine 10 cups of whole wheat flour
  2. 2 tsp salt, and 4 tbsp oil. Mix well.
  3. Gradually add 4-5 cups of water to form a soft dough. Knead for 10 minutes until smooth. Cover and let it rest for 30 minutes.
  4. Boil 10 medium potatoes until soft. Peel and mash them in a bowl.
  5. Add 2 cups chopped mint leaves
  6. 4 tsp cumin powder
  7. 4 tsp chaat masala
  8. 2 tsp red chili powder, and salt to taste to the mashed potatoes. Mix well to form the filling.
  9. Divide the dough into 20 equal portions. Roll each portion into a small ball.
  10. Flatten a dough ball and place 2-3 tbsp of the potato-mint filling in the center. Seal the edges to enclose the filling completely.
  11. Dust with flour and roll out gently into a 6-8 inch circle, ensuring the filling doesn’t spill out.
  12. Heat a tawa over medium heat. Place the rolled parota on the tawa and cook for 1-2 minutes until small bubbles appear.
  13. Flip the parota, drizzle 1 tsp oil or ghee around the edges, and cook for another 1-2 minutes until golden brown spots appear.
  14. Flip again, apply oil on the other side, and cook until both sides are golden and crisp. Repeat for all parotas.
  15. Serve hot with yogurt, pickle, or curry of choice.
