How to Prepare

  1. Boil the potatoes in a large pot with water and a pinch of salt until they are just tender (about 15-20 minutes). Do not overcook.
  2. Drain the water and let the potatoes cool slightly. Peel and cut them into small cubes.
  3. Heat oil in a large frying pan over medium heat. Add mustard seeds and wait until they start to splutter.
  4. Add urad dal and chana dal to the pan. Fry until they turn golden brown.
  5. Add curry leaves, dried red chilies, and asafoetida. Stir for a few seconds.
  6. Add the cubed potatoes to the pan. Mix well to coat the potatoes with the tempering.
  7. Sprinkle turmeric powder and salt over the potatoes. Stir gently to combine.
  8. Cook on low heat for 5-7 minutes, stirring occasionally, until the potatoes are slightly crispy on the outside.
  9. Add grated coconut (if using) and mix well. Cook for another 2 minutes.
  10. Turn off the heat and garnish with chopped coriander leaves before serving.
