How to Prepare

  1. Wash and peel the snake gourd (pudalangai). Cut it lengthwise, remove the seeds, and slice into thin half-moons.
  2. In a small bowl, mix turmeric powder, red chili powder, coriander powder, and salt with a little water to make a paste.
  3. Heat oil in a large frying pan or wok over medium heat. Add mustard seeds and let them splutter.
  4. Add urad dal and chana dal to the pan. Fry until they turn golden brown.
  5. Add curry leaves and dried red chilies. Sauté for a few seconds until fragrant.
  6. Add the sliced snake gourd to the pan. Stir well to coat with the tempering.
  7. Add the prepared spice paste to the snake gourd. Mix thoroughly to ensure even coating.
  8. Cook on medium heat for 10-12 minutes, stirring occasionally, until the snake gourd is tender and slightly crispy.
  9. Sprinkle grated coconut over the fry and mix well. Cook for another 2 minutes.
  10. Turn off the heat and serve hot with rice or roti.
