How to Prepare

  1. In a large mixing bowl, combine 5 cups of whole wheat flour with 1 tsp salt.
  2. Add 2 cups of finely chopped fresh mint leaves and 2 tsp of green chili paste to the flour.
  3. Gradually add 1.5 to 2 cups of water and knead into a soft, smooth dough. Cover and let it rest for 15 minutes.
  4. Divide the dough into 20 equal portions and roll each portion into a ball.
  5. Dust a rolling surface with flour and roll each ball into a thin circle, about 6-7 inches in diameter.
  6. Brush a little ghee or oil on the rolled dough, fold it into a semi-circle, brush again, and fold into a triangle or square.
  7. Heat a tawa over medium heat. Place the folded paratha on the tawa and cook for 1-2 minutes until light brown spots appear.
  8. Flip the paratha, brush with ghee or oil, and cook for another 1-2 minutes until golden brown and crisp.
  9. Repeat for the remaining dough portions. Serve hot with yogurt, pickle, or curry.
