How to Prepare
In a large mixing bowl, combine 5 cups of whole wheat flour with 1 tsp salt and 2 tbsp oil. Gradually add water (about 2 cups) to form a soft dough. Knead for 5-7 minutes until smooth. Cover and let it rest for 20 minutes.
In another bowl, mix 5 finely chopped onions
2 tsp cumin seeds
2 tsp green chili paste
1 tsp red chili powder
1 tsp garam masala
1 tsp amchur powder, and 4 tbsp chopped coriander leaves. Add salt to taste.
Divide the dough into 20 equal portions. Take one portion, roll it into a small circle, place 1-2 tbsp of the onion mixture in the center, and fold the edges to seal it into a ball.
Dust the stuffed ball with flour and roll it gently into a 6-7 inch circle, ensuring the filling doesn't spill out.
Heat a tawa over medium heat. Place the rolled paratha on the tawa and cook for 1-2 minutes until small bubbles appear. Flip it over.
Spread 1 tsp of ghee or oil on the cooked side, flip again, and spread ghee on the other side. Cook until both sides are golden brown with crisp spots.
Repeat the process for the remaining dough portions. Serve hot with yogurt, pickle, or butter.
