How to Prepare

  1. In a large mixing bowl, combine 2 cups of rava (semolina)
  2. 1 cup of rice flour, and 1/2 cup of maida (all-purpose flour).
  3. Add 1/2 cup of curd
  4. 2 finely chopped green chilies
  5. 1 tsp of cumin seeds
  6. 1/2 tsp of black pepper, and salt to taste. Mix well.
  7. Gradually add 6-7 cups of water to form a thin, runny batter. Let it rest for 15 minutes.
  8. Heat a non-stick dosa tawa over medium heat and lightly grease it with oil.
  9. Stir the batter well, then pour a ladleful of batter onto the tawa in a circular motion, starting from the edges and moving to the center to form a thin layer.
  10. Drizzle 1 tsp of oil or ghee around the edges of the dosa. Cook for 2-3 minutes until the edges turn golden and crisp.
  11. Flip the dosa (optional) and cook for another 30 seconds if desired. Fold and serve hot with chutney and sambar.
  12. Repeat the process for the remaining batter, stirring well before each dosa to prevent settling.
