How to Prepare
Peel and boil the raw bananas until soft (about 15 minutes).
Mash the boiled bananas in a mixing bowl.
Add finely chopped onions, green chilies, ginger, curry leaves, coriander leaves, turmeric powder, red chili powder, and salt to the mashed bananas. Mix well.
Heat 2 tablespoons of oil in a small pan, add mustard seeds, and let them splutter. Add this tempering to the banana mixture and mix.
Shape the mixture into small lemon-sized balls.
Prepare the batter by mixing gram flour, rice flour, red chili powder, turmeric powder, a pinch of asafoetida, and salt with water to form a thick, smooth batter.
Heat oil in a deep frying pan over medium heat.
Dip each banana ball into the batter, ensuring it is fully coated, and carefully drop it into the hot oil.
Fry the bondas in batches until golden brown and crispy (about 3-4 minutes per batch).
Remove with a slotted spoon and drain excess oil on paper towels.
