How to Prepare
In a large mixing bowl, combine 10 cups of whole wheat flour with a pinch of salt.
Gradually add 3-4 cups of water and knead into a soft, pliable dough. Cover and let it rest for 20 minutes.
Divide the dough into 40 equal portions (for 20 people
2 rotis each).
Roll each portion into a ball and flatten it slightly.
Dust with dry flour and roll out each ball into a thin, round disc (about 6-8 inches in diameter).
Heat the tandoor or tawa on medium-high heat. If using a tandoor, slap the roti onto the inner wall; if using a tawa, place the roti on the hot surface.
Cook for 1-2 minutes until bubbles appear, then flip (if on tawa) and cook the other side for another 1 minute. If in a tandoor, let it cook until light brown spots appear.
Remove using tongs and brush with ghee or butter if desired.
