How to Prepare

  1. Dry roast 2 kg of white sesame seeds in a heavy-bottomed pan on low to medium heat for 5-7 minutes until they turn golden and release a nutty aroma. Stir continuously to avoid burning. Transfer to a plate to cool.
  2. In the same pan, dry roast 200 g of dried red chilies on low heat for 2-3 minutes until they become crisp. Remove and let them cool.
  3. Dry roast 100 g of cumin seeds for 1-2 minutes until aromatic. Set aside to cool.
  4. Once all ingredients are cooled, grind the sesame seeds in a blender to a coarse powder. Do not over-grind as sesame seeds release oil and can become pasty.
  5. Add the roasted red chilies, cumin seeds, and 50 g of salt to the blender. Grind everything together into a fine powder.
  6. Transfer the powder to a clean, dry airtight container for storage.
