How to Prepare

  1. Rinse 5 cups of toor dal thoroughly until the water runs clear.
  2. In a pressure cooker, add the rinsed dal
  3. 15 cups of water
  4. 2 tsp turmeric powder, and 2 tbsp salt. Cook for 3 whistles on medium heat.
  5. Once the pressure releases naturally, mash the dal lightly with a spatula for a smoother consistency.
  6. In a large pan, heat 1 cup ghee over medium heat. Add 4 tsp cumin seeds and let them splutter for 30 seconds.
  7. Add 10 finely chopped garlic cloves and 5 chopped green chilies. Sauté until garlic turns golden brown.
  8. Add 5 finely chopped medium onions and cook until they turn translucent and soft.
  9. Add 10 chopped medium tomatoes and cook until they become mushy and oil starts separating.
  10. Add 5 tsp red chili powder
  11. 5 tsp coriander powder, and 2.5 tsp garam masala. Mix well and cook for 2 minutes.
  12. Pour the mashed dal into the pan with the tadka. Mix thoroughly to combine.
  13. Add water if needed to adjust consistency (should be semi-thick). Simmer for 10 minutes on low heat.
  14. Add 1.25 cups chopped coriander leaves and mix well. Turn off the heat.
  15. Serve hot with rice or roti.
